Chocolate-Coffee Crunch Cookies

This is such a yummy and fantastic-tasting cookie! It also looks really pretty, and can easily be used for a simchah or to send over for that special occasion. Enjoy the great chocolate-cookie combo – this is one flavor whose popularity seems to increase over time!

Prepare the Cookies

Yields: 2 and 1/2 dozen cookies

  1. Preheat oven to 375°F (190°C).

  2. Melt two cups chocolate chips. Set aside two-thirds cup melted chocolate for drizzling. 

  3. Beat margarine, sugar, and extracts in a large mixing bowl. Add eggs and chocolate; beat until combined. Add dry ingredients besides for candy; mix just until combined. 

  4. Stir in remaining chips and form into 1-inch (2.5-cm) balls. Place on a prepared baking sheet, spacing one and a half inches apart. 

  5. Bake 10 minutes and cool on rack. Rewarm reserved chocolate and drizzle over cookies. Sprinkle with crushed candy. Chill to set.
