Maple-Flavored Muffins

We’ve just celebrated our tenth anniversary at Tasty Lo-fat Creations, where we sell whole wheat, low-fat muffins, biscotti, cakes, and desserts. This is the latest addition to our menu and it’s just too good not to share with you all! The ingredients are basically staples in most kitchens. Enjoy it any time of day you need a pick-me-up and want something that’s good for you as well as satisfying and delightful. Freezes well, too.

Ingredients

Main ingredients

  •  1 and 3/4 cups flour (Shibolim Whole Wheat Flour or other whole wheat pastry flour recommended)

  • 1/8 cup wheat germ

  • 1/8 cup oat bran

  • 1/3 cup brown sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 3/4 cup soy milk or Gefen Almond Milk

Topping

  • 3 tablespoons flour (Shibolim Whole Wheat Flour or other whole wheat pastry flour recommended)

  • 3 tablespoons light brown sugar

  • 3 tablespoons chopped walnuts or pecans

  • 1/2 heaping teaspoon cinnamon

  • 1 tablespoon oil

  • 1/2 teaspoon maple extract (optional but recommended)

Directions

Prepare the Muffins

1.

Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).

2.

In a large bowl, combine the flour, wheat germ, oat bran, brown sugar, baking powder, and salt.

3.

Make a well in the center. Add the wet ingredients: soy milk, oil, maple syrup, yogurt, egg, and extracts.

4.

Stir into the dry ingredients just until moistened.

5.

Fill muffin tins lined with paper three-fourths of the way full.

Prepare the Topping

1.

Combine all the ingredients in a small bowl until crumbly.

2.

Sprinkle over muffins.

3.

Bake for 20–22 minutes or until golden and ready. Let cool.

Its a yellow orange bottle. Its usually right near the chocolate syrup.

I wondered if they had maple trees there.

To my knowledge, (and I might be wrong) there are no maple trees in Israel. One can purchase real maple syrup but it is very expensive. There is maple flavored syrup. Brynie would be more knowledgable on the subject.

can these muffins be made parve? What can be substituted for yogurt to make these muffins parve ?

Delicious and Healthy Breakfast muffin! Thank you brynie for providing me with that recipe that i have always been waiting for! This muffin is the perfect combination, it is healthy, tasty, and the dairy yogurt and milk make it quite filling. Please keep more of its kind coming!
