Preheat oven to 350 degrees Fahrenheit.
Sprinkle kosher salt, pepper, and a generous amount of smoked paprika onto ribs.
Pat brown sugar onto ribs.
Lay out two sheets of heavy-duty aluminum foil, slightly overlapping. Place ribs on top and close foil on all sides. Repeat two more times so ribs are covered in three layers of foil.
Place ribs on a baking sheet, meat-side down. Bake for four hours.
Open foil slightly and test meat’s doneness with a fork. If it isn’t soft, return to oven for another 30 minutes and repeat.
Remove meat from oven and let rest for one hour without opening the foil.
When ready to serve, reheat for 15 minutes. Transfer to a plate and pour any extra sauce on top.
