I love walking through the grocery aisles and getting inspiration from the ingredients I see. I recently spotted ready-made pesto, and it got me thinking — how can I incorporate this into dinner without using pasta? I came up with this recipe, and we’ve enjoyed it ever since!

Directions

  1. Combine mayonnaise and pesto in a bowl. Add salmon and coat evenly with the mixture. Let sit and marinate in the refrigerator for 30 minutes.

  2. Preheat oven to 400 degrees Fahrenheit. Combine the crumb topping ingredients in a small bowl. Place marinated salmon in a 9×13-inch pan and top with the crumbs, pressing down gently. Spray with cooking spray and bake in preheated oven for 20 to 25 minutes, until salmon is done.
