Whipped Brie Cheese with Strawberry Balsamic Compote (plus Air-Fried Brie Rind Bites)

  1. In a food processor fitted with an S blade, blend the Brie until smooth.

  2. Spread over a plate or board.

  3. In a pan over medium heat, add the strawberries. Soften for about two to three minutes. Add the sugar and balsamic vinegar and stir until dissolved. Add salt, pepper, and thyme to taste.

  4. Spoon over Brie and sprinkle with a little of the Brie, salt, and a drizzle of olive oil.

  5. Serve with warm toasts or your favorite crackers.

Tips:
Here’s a delicious way to use up those Brie rinds: Cut rind into squares. Set up a dredging station with one cup flour, two whisked eggs, and one cup seasoned panko, in separate shallow plates. Dip the Brie in flour, then egg, then panko. Place in an air fryer and spray with oil. Fry at 400 degrees Fahrenheit for eight minutes or until golden brown. Top with honey and a pinch of salt.
