Directions

  1. Place a large skillet on medium heat. Add in the oil, onion, garlic, and bell pepper. Cook, stirring every once in a while, till onion and pepper are slightly softened, about five minutes. Next, add in the Beleaves Frozen Riced Cauliflower. Break apart any frozen clumps, mix, and continue to cook. Cover a bit if needed. After about five minutes, add in the beans and corn.

  2. In a separate bowl mix together the tomato sauce, water, and spices. Pour into the pan and stir. Continue cooking till bubbly. Lower heat and add the shredded cheese on top. Cover the skillet and allow cheese to melt.

  3. Once melted, add some chopped cilantro over the top if desired.
