Turkey Pumpkin Gnocchi

Here’s a one pot meal to enjoy on a cold night. It’s easy to prepare, filling and comforting!

Directions

  1. In a pot, heat olive oil over medium heat.

  2. Add the diced onion and garlic, and sauté for two to three minutes until the onion is translucent. Add the ground turkey to the skillet, breaking it up as it cooks. Cook until browned.

  3. Season with salt, pepper and dried herbs.

  4. Add in the gnocchi and mix to combine.

  5. Mix together the pumpkin with the water and pour over the turkey and gnocchi. Cover and allow to simmer covered for about 10 minutes, stirring occasionally, until it’s heated through, well combined and the gnocchi has softened.

I made this yesterday, and it was a HUGE hit! I used ground white chicken and added frozen veggies for a pop of color and some crunch. Since my family enjoys spicy food, I added a bit of heat. It makes excellent leftovers and would probably freeze well—if there had been any left! I highly recommend giving it a try.
