Creamy Pineapple Sorbet

This delightful sorbet is refreshing, tasty, and oh so good! The lime juice has a distinctive, delicious flavor (don’t be tempted to substitute with lemon). It’s easy to prepare, since you can freeze the fruit in advance.

Directions

Prepare the Sorbet

  1. Place pineapple chunks into zip-lock bag and freeze at least 24 hours before preparing sorbet.

  2. Place half of the frozen chunks into food processor fitted with the knife blade. Add half of the lemon juice, sugar, and water to the food processor. Process on high until the mixture turns light-colored (almost white) and creamy. Move to container and place in freezer.

  3. Repeat with remaining ingredients, add to container. Keep frozen until ready to serve.

Notes:

It doesn’t matter if some bits of pineapple aren’t totally blended; they add texture and flavor to the sorbet. It’s important to do the blending in two batches because otherwise it won’t blend well — the recipe is too large.

I'd like to use canned crushed pineapple instead of a fresh pineapple. Is it 2 cans to 1 fresh pineapple, rest is the same or do I double the rest of the ingredients? Thanks

Delicious and super easy! I used a can of pineapple chunks and it was delicious!
I use a hand blender and do it all in one go. I now routinely double the recipe (using 2 cans) because it goes so fast!

Works great with canned pineapple! I made it with canned pineapple and it came out delicious!I didn't find that the consistency was affected. I would have preferred it more tart though, so next time I'd add more lemon juice (I used that instead of lime juice).

Does canned pineapple work? Here in Israel it's quite difficult to get ahold of fresh pineapple.
Is it possible to replace it with canned pineapple?

Offhand, I would say yes. Although I must warn you as someone who makes and sells sorbet, that sometimes subbing canned fruit for fresh does significantly alter the texture. Especially with a fruit like pineapple. I once subbed pineapple types in a different recipe and it didn't come out the same.
