Chicken Lo Mein

Lo Mein is one my favorite dishes to make. I love how a starch, protein, and veggies are all incorporated into one dish.

Directions

Prepare the Lo Mein

  1. Cook noodles according to package.

  2. Cut chicken cutlets really thin, and then slice into small pieces. Coat in marinade: ginger, sesame oil, soy sauce and garlic. Heat 1 tbsp sesame oil in a wok and add chicken. Cook on medium heat until cooked through (about 4-5 minutes per side). When cooked, remove chicken from pan.

  3. Mix together 4 tbsp soy sauce, sugar, 2 tsp sesame oil, 1 cube ginger, 1 tsp sriracha, and 1 tsp hoisin sauce.

  4. Add more sesame oil If needed, and raise heat to medium-high.

  5. Add the onion, and cook until translucent (about 5 minutes), then add peppers and carrots, cook for 2 minutes. Then add cabbage and zucchini, cook for 1 minute. Add the noodles, chicken, and sauce. Mix together until everything is well coated in sauce.
