DIY Firecracker Popsicles

Fireworks have been going off for weeks now, but the real deal is still yet to come! There is no better way to celebrate July 4th than with some homemade firecracker popsicles.

 

 

They are refreshing, easy to make (a must these days!) and a treat that pleases both adults and children. Enjoy!

 

INGREDIENTS:

 

Red Layer:

2 cups strawberries

2 tablespoons granulated sugar

2 tablespoons lime juice

 

White Layer:

3/4 cup plain yogurt

4 and 1/2 tablespoons heavy cream

3 tablespoons granulated sugar

2 tablespoons lime juice

 

Blue Layer:

2 cups blueberries

2 tablespoons lime juice

2 tablespoons granulated sugar

 

DIRECTIONS:

 

Make the Red Layer:

 

 

1. Place strawberries, sugar and lime juice in a blender. Blend until smooth, if needed scrape down the sides to ensure smoothness.

 

2. As an extra measure, it’s best to then pour it through a fine-mesh sieve into a bowl, pressing down on the solids.

 

3. Once the consistency has no lumps, fill the ice-pop molds 1/3 of the way and place in the freezer for 30 minutes or until firm.

 

Make the White Layer:

 

1. In a small bowl, use a hand whisk to mix the yogurt, cream, sugar and lime juice into a creamy consistency.

 

2. Remove the mold from the freezer and carefully top with the yogurt mixture, filling another 1/3 of the way. Put the molds back in the freezer for 30 minutes or until firm.

 

Make the Blue Layer:

 

1. Place the blueberries, sugar and lime juice in a blender. Blend until smooth, if needed scrape down the sides to ensure smoothness.

 

2. Again as an extra measure, it’s best to then pour it through a fine-mesh sieve into a bowl, pressing down on the solids.

 

 

3. Once the consistency has no lumps, remove the molds from the freezer. Place the stick through the white and red layer. Once the sticks have been placed in each mold, add the last layer of blueberry puree, leaving an inch of free space at the top of the molds.

 

4. Place the molds back in the freezer for a least another 4 hours.

 

These quick patriotic pops are the way to go!
