The crisp smell of Fall is in the air as Rosh Hashanah approaches.  The kids are busy in school trying to quickly memorize all of the simanim before classes break for the high holidays.

Soft and sweet with a bit of a crunch inside, these fall-flavored “apples” are easy and delicious. No candy thermometer needed! These ingredients might even be on hand already.

Popcorn Apple Recipe

Prep Time: 10 minutes

Cooking Time: 7 Minutes

Serves: 20

Ingredients

● 10 cups popped popcorn

● 1/4 cups vegan butter

● 1/2 cups light corn syrup

● 8 ounces mini marshmallows

● 5-6 drops red food coloring

● 1/2 teaspoons cinnamon

● 20 whole cloves, chocolate frosting, or a pretzel stick broken into the size of a stem

● 2 tablespoons green frosting

Directions

1. Preheat oven to 300 degrees Fahrenheit. Spread the popcorn onto a parchment-lined baking sheet. Place the popcorn in the oven and keep it there until you are ready to cover it with the candy coating.

2. In a saucepan over medium heat, bring vegan butter and corn syrup to a boil.

3. Add the marshmallows, food coloring, and cinnamon. Stir until melted and fully combined.

4. Remove from heat and immediately pour over the popcorn. Mix with a silicone spoon or other nonstick utensil until all of the popcorn is fully covered.

5. Immediately start shaping. This is where I bring the little ones in. Spray your hands with cooking spray every two to three balls to keep the candy from sticking. For kids, put latex gloves on them and then spray the gloves with oil. This will protect sensitive little hands from the lingering heat of the candy coating.

6. For each ball, take about 1/2 cup of coated popcorn and squish it tightly together between your palms, then roll into a nice ball. Set on a parchment paper to cool.

7. Working quickly (and helping kids as needed), get all of the balls rolled and then immediately press a whole clove into the top of each one as a “stem.” The clove has a round part and then a stick, press the round part into the candy coating on the top of an “apple” to get it to stick. You can also use brown frosting to pipe a stem, or break a pretzel stick and stick it in (adhering it with frosting).

8. Lastly, place the green frosting into a sandwich baggie. Press all of the air out and seal it. Then trim a small hole into the corner. Work the frosting down toward the hole and now it is all set to use as a piping bag.

9. Little ones can do this step too! Pipe little leaves coming off of each stem as a final touch to make them look like apples.

When serving, just be sure to tell people to remove the stem, just like you would a real apple! These are so simple and fun to make. They will keep for a week easily in an airtight container. They do not need to be refrigerated. Chag Sameach!
