Making this a full week's menu of meals you can double, eat half and freeze half. For filling the freezer after YT.
There’s a particular point after Yom Tov when you look in the freezer and realize…you’re going to have to start cooking again.
If you’re going to cook anyway, you might as well make it count. These recipes are the kind of dinners you can make a double batch of without much extra work. Serve one tonight, and freeze the other for a night when you really don’t feel like cooking.
We’ve got a full week of meat dinners and a full week of dairy dinners, all built around the same idea: cook once, eat twice. It’s not a meal-prep marathon. It’s just a smarter way to make dinner.
Pro Tip: If you don't have it in you to store full dinners this week, at least brown a few pounds of ground beef. Freeze in dinner-sized portions. You can pull them out as needed for topping baked or mashed potatoes, flatbreads, tacos, as the basis for a quick meat sauce for pastas or sloppy joes, stir fries, and many other possibilities.
