Submitted by Meira Perl This roast chicken has a Mediterranean flavor and is my most requested chicken recipe.
1 chicken, cut up and fat trimmed
1 tablespoon dried oregano
2 teaspoons dried cumin
1 tablespoon dried coriander
1 tablespoon lemon juice
zest from 1 lemon
1 teaspoon black pepper
1 tsp kosher salt
3 TBSP olive oil
3 cloves garlic / 3 frozen garlic cubes
2 onions, sliced into rings
Preheat oven to 375 degrees Fahrenheit.
In a bowl mix all ingredients except onions and chicken until a paste is formed.
Rub the paste all over chicken pieces and under the skin.
In a baking dish, place onions and sprinkle with 3 TBSP water.
Place chicken pieces on top of onions
Bake in oven 45 minutes, basting occasionally with pan juices, After 45 minutes, increase temperature to 450 degrees and bake for an additional 10 minutes until chicken is cooked through and skin looks crispy. Remove from oven and allow to rest for 10 minutes before serving.
