I love the look of the decorative chocolate logs that are popular at family simchas . But instead of the usual chocolate/praline filling, I prefer to do it with cake and cream. It’s always gone before “bentching” !
You can make this dessert with your favorite cake recipe. The easiest is the Hershey’s Chocolate Cake recipe as follows:
2 cups sugar
1-3/4 cups flour
3/4 cup Hershey’s or Bakers Choice dark cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup creamer (instead of milk)
1/2 cup veg oil
2 teaspoons van extract
1 cup boiling water and 2 tb coffee
Combine all dry ingredients in bowl. Dilute coffee in boiling water. Add the rest slowly. Mix well. Batter will be thin. Pour onto cookie sheet lined with parchment paper . Bake on 350 degrees for 25 min. Cool.
Cut 5 strips as follows: two narrow strips, two slightly wider strips. and the 5th will be used as “fill in”.
Prepare decorative mat for the outer chocolate shell as for any chocolate (mat design) log. Allow to set in the mold.
Smear cream all over inside, coating entire inner shell in thin layer.
Insert one narrow strip.
Add thin layer of coffee cream or any cream of your choice.
Insert wider strip. Press down firmly with strip of parchment paper.
Cover tightly and freeze overnight.
Add end caps for complete look.
