2 butternut squash, peeled, cored, and sliced into “fries” (or purchase pre-cut)
1/4 cup Gefen Olive Oil
salt, to taste
pepper, to taste
1 tablespoon chili powder
2 teaspoons Gefen Paprika
1/2 teaspoon Gefen Cinnamon
1/2 teaspoon cumin
1/3 cup pepitas
1/3 cup pecans
1/3 cup Gefen Pure Maple Syrup
1/2 cup crumbled sheep feta, such as Ta’amti
arugula or baby greens
parsley
pomegranate arils
Preheat oven to 400 degrees Fahrenheit.
Combine cut butternut with oil and spices, mix well, and bake on a lined sheet pan for 35 minutes or until golden.
Sprinkle pepitas and pecans over the top and drizzle with the maple syrup. Return to oven until caramelized – approximately 15 more minutes.
Serve over a bed of greens, top with feta cheese, garnish with parsley and pomegranate seeds, and additional maple drizzle if desired.
