Yields 1 9-inch bundt pan
1 egg
1/4 cup sugar
8 ounces cream cheese
3 eggs
1 and 3/4 cups sugar
1 cup oil
1/2 cup orange juice
2 and 1/2 cups Mishpacha Flour
2 teaspoons Gefen Baking Soda
2 teaspoons Gefen Cinnamon
1 teaspoon salt
3 cups grated carrots
1/2 cup chopped walnuts
Blend cream cheese, sugar and eggs. Set aside.
Beat eggs, add sugar, oil and juice. Slowly add remaining ingredients. Set aside two cups of the batter.
Pour batter into greased nine-inch bundt pan.
Pour cream cheese mixture over batter. Carefully spoon reserved batter on top of cream cheese, covering cheese completely.
Bake at 350 degrees Fahrenheit for 55 minutes or until done. Cool and sprinkle with confectioners’ sugar.
