Submitted by Malky Neustein House rule 85: one shall not complain that one hates supper before actually hearing what’s on the menu! But when my 5 year old son saw the defrosted ground chicken on my counter he thought that that’s enough of a clue to warrant a “I hate chicken for dinner”. My exhausted mind refused to deal with another night of frying patties only to have everyone unhappy. And then inspiration hit. I thought LATKES!! That is everyone’s favorite. Ground chicken…. not so much! Can I marry the two?? 20 minutes later we had crispy chicken latkes. That took care of the protein and the starch. Some cut up veggies made dinner complete. And when my son said, “Mommy, can we have this supper again tomorrow? Not the pasta, just the chicken,” I thought I might be on to something.
2 lb ground dark chicken
2 raw potatoes, grated
2 eggs
Salt to taste
pepper to taste
Mix all ingredients.
Heat up oil in a frying pan.
Fry patties until golden on both sides.
