Diets Blondies are essentially a vanilla based brownie. They don’t contain cocoa powder like your average brownie, but they do have plenty of chocolate chips which is always a win. They’re rich, decadent, and an all-around sweet dessert. If you’re a huge fan of brownies and love vanilla-based desserts, then you will love these.
1 stick + 3 tablespoons unsalted butter, room temperature
1/2 cup white sugar
1 cup light brown sugar, lightly packed
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour, spooned and leveled
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chocolate chips
Preheat your oven to 350 degrees Fahrenheit and grease a square, nine-inch brownie pan.
In your stand mixer bowl, add in your softened butter and beat it with the paddle attachment for about one minute until light and fluffy. Add in your sugars and mix until creamy, about three minutes or until you get a grainy paste.
Add in the eggs and vanilla and mix until fully incorporated.
Sift in the flour, baking soda, and salt and mix to combine. Make sure not to over mix.
Fold in your chocolate chips.
Spread your dough evenly into the pan, using a spatula or the back of a spoon to get it up to the sides of your pan.
Bake the blondies for 20-25 minutes until a toothpick from the center comes out clean. Allow it to cool in the pan for about 10 minutes before diving in.
