These latkes are filled with more than just potatoes! Enjoy the extra color, taste and nuitrition from the carrots, zucchini, and purple onions. Submitted by Chanukah Fans (RAMiChaShiAdTi) Hyde
4 potatoes
5 carrots
2 zucchinis
2 purple onions
6 eggs, beaten
1/4 cup flour
salt
pepper
oil, for frying
Grate the potatoes, carrots and zucchinis and then strain them to get rid of all juices.
Dice the onions and mix them into the grated vegetables.
Add in the beaten eggs, flour, salt and pepper, mix well.
Heat canola oil in a frying pan and spoon the mixture into the pan.
Once one side of the latke has browned, turn the latke onto its other side. Leave the latke on this side until browned.
Pick the latke out of the pan and dab with baking paper.
