Diets This soup is rich and creamy with the perfect touch of broccoli, making it the most delicious addition to your next dairy meal.
1/4 cup (1/2 stick) unsalted butter
1 medium yellow onion, diced small
1/4 cup Glicks Flour
4 cups veggie broth, such as Manischewitz
1 cup water
1 bag (24 ounces) Beleaves Chopped Broccoli
1/4 cup heavy cream
salt, to taste
ground black pepper, to taste
In a pot, melt butter over medium heat. Add onion and cook, stirring occasionally, until softened, eight minutes.
Add the flour and mix for one minute. Pour in the broth and cone cup of water. Bring to a boil.
Lower the flame and add in the bag of chopped broccoli.
Cook for 20 to 25 minutes, or until very tender.
Blend the soup. Add in the heavy cream and season with salt and pepper to taste.
