This recipe changed how I feel about energy balls. Even the kids love them!
1 cup oats
6 dates, chopped
1/2 cup Gefen Almond Flour
1/3 cup Gefen Almond Butter
2 tablespoons grated coconut, plus more to coat
1 teaspoon vanilla extract
3 tablespoons Gefen Honey
pinch of salt
In a mini food processor, pulse oats a few times. Add dates and pulse a few times more (processing the oats and dates first helps the mixture come together evenly).
Add almond flour, almond butter, coconut, vanilla extract, honey, and salt. Blend to combine.
Form balls and roll in additional coconut to coat.
