6 eggs
1/2 cup sugar
1 teaspoon Gefen Vanilla Extract
2 cups soft white cheese (Israeli gvina levana or quark cheese can be substituted with farmer’s cheese, cottage cheese, ricotta, sour cream)
1 and 1/2 cups flour
1/2 teaspoon Gefen Cinnamon
1/4 cup plus 1/2 cup Gefen Confectioners’ Sugar or other powdered sugar, divided
1/2 cup raisins (optional)
oil, for frying
Whip together eggs, sugar and vanilla until light and fluffy.
Add cheese and mix well.
Fold in flour, cinnamon, and 1/4 cup powdered sugar until just combined. Fold in raisins if using. (Batter can be made up to five hours in advance and kept in refrigerator.)
Drop spoonfuls into hot oil (350 degrees Fahrenheit). Best not to crowd the pan.
Fry until brown on all sides. Dust with more powdered sugar for decoration.
