This is a wonderful quick-and-easy recipe that everyone loves, requiring minimal effort and delivering consistently excellent results.
2 cups raw quinoa, such as Pereg, rinsed
2 and 3/4 cups water
1/4 cup oil
4 tablespoons Glicks Soy Sauce (or use wheat-free if needed)
1 green pepper, diced small
1 red pepper, diced small
1 cup diced mushrooms
1 red onion, diced small, or 2 tablespoons onion flakes
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Spread quinoa evenly in a large glass dish or an aluminum-foil-lined 9×13-inch (23×33-centimeter) pan. Add the rest of the ingredients and mix well to combine.
Cover tightly with aluminum foil and bake for 40 minutes.
