Ingredients

Quinoa with Veggies

  • 2 cups raw quinoa, such as Pereg, rinsed

  • 2 and 3/4 cups water

  • 1/4 cup oil

  • 4 tablespoons Glicks Soy Sauce (or use wheat-free if needed)

  • 1 green pepper, diced small

  • 1 red pepper, diced small

  • 1 cup diced mushrooms

  • 1 red onion, diced small, or 2 tablespoons onion flakes

Directions

1.

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).

Spread quinoa evenly in a large glass dish or an aluminum-foil-lined 9×13-inch (23×33-centimeter) pan. Add the rest of the ingredients and mix well to combine.

3.

Cover tightly with aluminum foil and bake for 40 minutes.
