Diets Garlic what? That was my first reaction when my husband mentioned garlic confit. I’d never seen it, heard about it, or tasted it before, but now we can’t get enough of it. I use the leftovers in salad dressing, on pizza crust, or on chicken or salmon.
Yields 1 cup
1/2 cup peeled whole garlic cloves
salt, to taste
pepper, to taste
Pereg Chili Flakes (optional)
olive oil, to cover
whole grape tomatoes
lemon slices
sprig of rosemary
chopped or sliced garlic
sliced jalapeño and chili pepper
sliced leek
jalapeño
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Combine desired ingredients in an ovenproof dish and cover with olive oil. Bake for 45 minutes or until golden.
