A beefy homemade tomato sauce takes center stage in this dramatic lasagna roll-up recipe. Topped with delectable, crispy beef fry, these roll-ups are perfect as an appetizer or even dinner. Did we mention they’re kosher for Passover? See how its done here.
1 and 1/2 pounds ground beef
3/4 cup chopped onion
2 tablespoons oil
1 (16-ounce) can diced tomatoes
32 ounces Gefen Tomato Paste
2 cups water
1 tablespoon chopped parsley or 3 cubes Gefen Frozen Parsley
2 teaspoons salt
1 teaspoon sugar
1 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon oregano
1 box gluten-free, Kosher for Passover certified lasagna noodles, cooked according to package instructions

Brown beef and onion in oil.
Add tomatoes, tomato paste, water, parsley, salt, sugar, garlic powder, pepper, and oregano. Mix well.
Cook uncovered for about 30 minutes.
Preheat oven to 350°
Line muffin tins with squares of Gefen Parchment Paper.
Roll one lasagna noodle and place it standing up into a muffin cup.
Fill center of noodle with beef mixture.
Repeat for all noodles.
Bake for 30 minutes.
Top with crispy beef fry.
