1 zucchini, chopped
1 cup brown rice
1 and 1/2 cups water
6 chicken thighs
3 to 4 tablespoons Gefen Lemon Juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon Gefen Garlic Powder
1/2 teaspoon onion powder
1/2 teaspoon Gefen Dry Parsley Flakes
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
Preheat oven to 400 degrees Fahrenheit.
Spray a large pan with nonstick spray. Add the zucchini, rice, and water.
Place the chicken on top of the rice. Drizzle on the lemon juice and spices. Cover the pan tightly with foil and cook for 45 minutes. Then uncover and cook for another 15 to 20 minutes until the top of the chicken is browned.
