Fudge puppies are a traditional fair food: toasty waffles dipped in chocolate and topped with whipped cream, crushed nuts, or other toppings. We’ve made them snack size and dipped them in crushed banana chips for added sweetness and crunch. Yields 24
1 and 1/2 cups sweet banana chips
1 cup dark or semisweet chocolate chips such as Glicks Chocolate Chips
24 mini waffles, toasted (see note)
about 1 cup Sweet Whipped Cream (below) or store-bought whipped cream
1 cup heavy cream
2 tablespoons granulated sugar
1 teaspoon Gefen Vanilla Extract
Place banana chips into the bowl of a food processor and pulse until coarsely ground. Pour crushed chips into a small shallow bowl.
Line a baking sheet with Gefen Parchment Paper.
Melt chocolate chips in a double boiler over medium heat, stirring occasionally until smooth. (Be careful not to let even a drop of water get into melting chocolate or it will seize up and become unusable).
Partially dip each waffle into the melted chocolate, gently shaking off excess, and then dredge in the crushed banana chips until well coated. Place on the prepared sheet and let chocolate set for about 30 minutes.
Serve fudge puppies with fresh Sweet Whipped Cream (recipe below) on top or on the side.
Place all the ingredients in a medium mixing bowl or the bowl of a stand mixer fitted with a whisk attachment and beat for four to five minutes, or until roughly doubled in volume and stiff peaks form.
Yields about 1 cup
