1/2 cup coconut flour
1/4 cup erythritol or sugar substitute
1/4 teaspoon baking powder
6 eggs
1/2 cup oil
1/4 cup milk of choice
1 tablespoon vanilla extract
optional toppings: sesame seeds, poppy seeds, everything bagel spice, cinnamon/sugar
Mix together coconut flour, sugar and baking powder.
Add in remaining ingredients (except toppings) and mix until very smooth and no lumps remain.
Pour into greased donut molds, filling 3/4 full.
Sprinkle on toppings (optional).
Bake at 180 degrees Celsius/350 degrees Fahrenheit for 15-20 minutes until firm.
Let cool.
Slice in half and fill with favorite sandwich filling (tuna, eggs, avocado, cheese).
