1 egg plus 1 egg yolk
3/4 cup vegetable oil
1 cup all-purpose flour
1 cup Gefen Almond Flour
1/4 cup cornstarch
1 tablespoon orange blossom water
1 cup walnuts, checked
1 cup granulated sugar
1 tablespoon orange blossom water
2 teaspoons oil
1 cup dates, checked
1 teaspoon vanilla extract
a few drops of water, if needed
Beat eggs, sugar, orange blossom water, and oil. Lastly, add the flours. If it’s too dry, add one more egg yolk.
Cover with plastic wrap and chill in the refrigerator for 20 minutes.
Process or chop the walnuts a little bit. Mix with sugar and vanilla.
Soak the dates in hot water for 10 minutes. Process with the extract, adding water if needed, until creamy.
Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
Over a parchment paper, stretch the dough (it may be a little crumbly, but that will only make the end result flakier), spread the date paste, then sprinkle the walnut filling. With the help of the parchment paper, roll it up.
Shape into a triangle and chill in the freezer for 30 minutes.
Slice the dough and place the slices on the prepared baking sheet. Bake for 10 to 12 minutes. Sprinkle over confectioners’ sugar.
