Make the Sandwich Cookies

Flatten the macaroons so they look more like cookies. Freeze.

2.

Take out the macaroons and put a scoop of slightly softened ice cream between two macaroon cookies. Press together.

3.

Roll the cookies in the toppings. The possibilities are endless!
