A delicious and healthy dish that is filling and satisfying. Shakshuka is a traditional Magrehbi dish which contains poached eggs in tomato sauce and other veggies. Enjoy this dish with a pita, baguette or even crackers.
olive oil
2 eggs
1/2 cup diced onions
pepper
1/2 cup of diced mushrooms
salt
paprika powder
1/2 cup of diced pepper
curry
1/2 cup diced courgette
cumin
full cup diced tomatoes
parsley
250 grams pasata sauce
1 garlic clove
Bring greased pan ( with olive oil) to medium high heat.
Sauté onions,courgettes, mushrooms, peppers and garlic clove together with salt, pepper, paprika powder, cumin and curry for about 6-9 minutes.
Once sautéed, add tomatoes and pasata sauce.
Make two openings in the pasata for the eggs.
Once the eggs are in the pan, cover with lid or plate until fully cooked.
Add parsley and more salt to finish off.
