Quick and easy to make (no mixer) — yummy AND healthy!   Yield: 12 muffins

Ingredients

Oat Bran Muffins

  • Glicks Cooking Spray (optional)

  • 2 and 1/4 cups oat bran hot cereal, uncooked (gluten-free, if needed))

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 3/4 cup parve milk, such as Gefen Oat Milk (or skim milk)

  • 2 eggs, slightly beaten

  • 1/3 cup Manischewitz Honey

  • 2 tablespoons oil

  • 1/4 cup raisins or blueberries (optional)

Directions

Prepare the Oat Bran Muffins

1.

Preheat oven to 425 degrees Fahrenheit. Line 12 medium-size muffin cups with paper cupcake holders or spray bottoms with cooking spray.

Combine dry ingredients in a bowl; mix well.

3.

In a separate bowl, combine milk of choice, eggs, honey, and oil.

4.

Mix together with dry ingredients, adding raisins or blueberries, if desired. Do not overmix.

5.

Fill prepared muffin cups three-fourths full. Bake 15 to 17 minutes or until golden brown.
