1. Preheat oven to 425 degrees Fahrenheit. Line 12 medium-size muffin cups with paper cupcake holders or spray bottoms with cooking spray.
2. Combine dry ingredients in a bowl; mix well.
3. In a separate bowl, combine milk of choice, eggs, honey, and oil.
4. Mix together with dry ingredients, adding raisins or blueberries, if desired. Do not overmix.
5. Fill prepared muffin cups three-fourths full. Bake 15 to 17 minutes or until golden brown.
