This is the easiest one-pan chicken dinner, baked with gnocchi in one dish and bursting with umami flavor and herbs. Watch more Easy Does It!

Ingredients

Gnocchi

  • 2 packages Tuscanini Mini Gnocchi

  • 1 onion, diced

  • 5 ounces cremini mushrooms, quartered

  • 8 whole cloves garlic

  • 1 tablespoon umami seasoning

Chicken

  • salt

  • pepper, to taste

  • 6 chicken thighs

Directions

Prepare the Chicken over Gnocchi

1.

Preheat your oven to 400 degrees Fahrenheit.

Add the gnocchi, onion, mushrooms, garlic, umami seasoning, and oil to a large baking dish and toss to combine. Top with fresh thyme and broth.

3.

In a bowl, make a paste with the garlic cubes, umami seasoning, oil, smoked paprika, salt, and pepper. Add the chicken and toss to coat. Add the seasoned chicken to the baking dish, cover, and bake for 45 minutes. Uncover and bake for about 15 minutes more, until the skin is golden.

this recipe is INCREDIBLE. So easy and delicious for a weeknight when you need so make something a bit fancier. The chicken juices give the gnocchi a nice rich flavor… I substituted leftover oil from my garlic confit for the truffle infused oil. Goes great with broccolini or asparagus

The chicken can be frozen but we don’t recommend freezing cooked gnocchi. However you can freeze them raw.

You can skip it or add anything that has an umami flavor to it.

You can actually make your own umami spice blend. Look up a recipe online 🙂

I would cover it as it keeps the chicken moist. Just uncover at the end if you like it krispy.
