Pineapple Popsicles


When I was asked to create diet desserts for this issue of Whisk, I thought that was an oxymoron. But I had a few tricks up my sleeve…


1. In a blender, puree coconut milk, lime juice, chopped pineapple, water, and corn syrup.
2. Pour into molds, add popsicle sticks, and freeze for three hours or until solid.
