Pre-wrap these adorable sandwiches in parchment paper and twine. You can even prepare them in advance and freeze.
Sauté mushrooms and scallions in oil.
Add the rest of the ingredients and let simmer for five minutes.
Slice open the mini baguette. Spread one tablespoon of the mushroom mixture inside.
Arrange tomato and cheese on top. Place in a panini machine to toast.
