1 bag spinach, such as Beleaves Frozen Spinach
1/4 cup oil
5 cloves garlic or 5 cubes Gefen Frozen Garlic
1/3 cup + 2 tablespoons Beleaves Flour
1 and 1/4 teaspoons salt
pepper, to taste
4 Yukon potatoes
1/4 cup oil
2 cloves garlic or 2 cubes Gefen Frozen Garlic
3/4 teaspoon salt
pepper, to taste
In a pot, heat the oil and add the garlic.
Stir in flour, then remove from the heat. Remove from the pan and set aside.
Return pan to the stove. Cook the spinach until heated through.
Add in the flour mixture, salt, and pepper, and combine well.
Cook the potatoes in water for about 40 minutes, or until very soft.
Add the oil, garlic, salt, and black pepper, then mash.
Remove the filo dough about 40 minutes before use.
Take three sheets and spray oil between them so they don’t stick to each other when baking.
Cut the stack of three sheets into four pieces.
Place a spoonful of the spinach mixture in the center of each stack.
Add some mashed potatoes on top of the spinach.
Bring the edges together in the center to form a neat little sack.
Once assembled, spray with oil.
Bake on 375 degrees Fahrenheit for 15-20 minutes until golden brown.

can this be frozen?
Yes, I’d freeze raw and then cook fresh.
