An anytime healthy snack, salad, or side.
1 cup quinoa, prepared according to package instructions and cooled completely
1 cup finely diced cucumber
1/2 red onion, finely diced
2 tomatoes, finely diced
1 bunch scallions, sliced
1 red pepper, finely diced
6 ounces (170 grams) crumbled Ta’amti Feta Cheese
1/3 cup olive oil
1/3 cup Tonnelli Red Wine Vinegar
3/4 cup Haddar Dijon Mustard
1 teaspoon oregano (dried)
1 teaspoon garlic powder
1 teaspoon Gefen Basil (dried)
3/4 teaspoon kosher salt
3/4 teaspoon pepper
3/4 teaspoon Gefen Onion Powder
Combine all ingredients for the dressing, whisking well to combine.
Combine all ingredients in a serving bowl; toss with dressing.
