pinch of cayenne pepper
4 eggs, lightly beaten
2 tablespoons yellow mustard (your favorite type of mustard will also work)
1 tablespoon Gefen Olive Oil
1/2 red onion, diced
1/2 cup rice milk
1 (16-ounce) salami, cut into small chunks
1/4 teaspoon salt
1 (16-ounce bag) frozen spinach
12 frozen tart shells
Preheat oven to 350ºF.
Using a pastry brush, brush the inside bottoms of each tart with mustard.
Add oil to a saute pan over medium heat. Add the red onion and spinach. Cook, stirring, for 3 to 4 minutes. Spinach does not have to be fully cooked as it will cook further in the oven.
Add the salami, Rice Dream, and seasonings and stir to combine. Remove saute pan from heat and stir in the eggs.
Fill pastry tarts with filling. Bake for 20 minutes or until crusts are lightly golden.
