Light, easy, simple, and sophisticated, this is perfect for a fancier lunch or light supper.
4 salmon fillets, cubed
1 bag shredded purple cabbage
6 mini cucumbers, sliced
5 radishes, sliced
1/4 cup assorted seeds (sunflower, sesame, etc.)
1/4 cup sugar
1/4 cup Gefen Lemon Juice
1/4 cup oil, such as Tonnelli Avocado Oil
Preheat oven to 350 degrees Fahrenheit.
In a bowl, mix sugar, lemon juice, and oil until smooth.
Place salmon in a pan. Pour 1/4 of the dressing over salmon cubes.
Bake for 12 minutes.
Place all salad ingredients in a bowl and toss with dressing.
