This healthy side dish looks beautiful and tastes great. Relatively easy to throw together in just a few minutes, using frozen veggies, this is a tasty and colorful dish to serve at a Shabbos or Yom Tov Seuda. This recipe is a “simcha recipe”, meant for a large crowd, but can conveniently be made to serve a smaller amount of people.
1/2 cup oil
8 pounds frozen baby carrots
4 pounds frozen snap peas
2 teaspoons salt
1/2 teaspoon pepper
1 cup sesame seeds, toasted
Using two large skillets, heat oil.
Add baby carrots and stir-fry for 10 to 12 minutes.
Add snap peas and fry another seven to 10 minutes.
Add spices and sesame seeds, mixing well.
Serve hot.

Can I use fresh baby carrots for this recipe?
Fresh baby carrots take a lot longer to cook. You could try boiling them first to soften them and then adding them to the pan.
