These muffins are so delicious and are a breeze to make with the help of Manischewitz’s extra moist chocolate cake mix. Enjoy over Yom Tov as a snack or breakfast, or take on a Chol Hamoed trip. Shaindy shows us how to make these Passover muffins on Just Make It!

Yield: 6 muffins

Ingredients

Chocolate Batter

Cheesecake Filling

  • 8 ounces cream cheese

  • 5 tablespoons sugar

  • 1/4 teaspoon vanilla extract OR 1 teaspoon Gefen Vanilla Sugar

  • 1 egg

Directions

Prepare the Chocolate Cheese Muffins

1.

Preheat oven to 350 degrees Fahrenheit.

2.

Whisk filling ingredients until fully combined.

3.

Follow directions on the box to make the chocolate cake batter in a separate bowl, then set aside.

4.

Place muffin liners in a cupcake tin. Using an ice cream scooper, scoop cake batter into the muffin liner. Add a scoop of cheese filling on top, then another scoop of cake batter.

5.

Bake for 25 minutes.

6.

Optional- once cooled, drizzle chocolate frosting on top of muffins.
