A hearty, fulfilling meal-in-one. You can cook this early in the morning to have a hot, fresh meal as soon as you get home. Tender beef, colorful veggies, and a blend of savory ingredients—supper is served.
1 and 1/2 pounds beef stew
2 tablespoons oil, such as Gefen Canola Oil
1 yellow onion, diced
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
1 carrot, chopped
1 parsnip, chopped
4 medium Yukon potatoes, cubed
1 cup diced tomatoes, such as Tuscanini
3 cups water
2 tablespoons soup mix
salt, to taste
pepper, to taste
2 tablespoons cornstarch
Heat oil in a frying pan and sear meat.
Add meat to the slow cooker along with all other ingredients, except the cornstarch, layered as listed.
Cook on low for eight hours or on high for four hours.
To thicken the stew: remove one cup of broth and mix with cornstarch. Slowly add the thickened broth to the stew and mix. Allow to cook for an additional 20 minutes.
