A balsamic vinaigrette pairs perfectly with sugar snap peas in this savory stir-fry.
Heat oil in a large frying pan over medium-high heat.
Add shallots and peppers and stir-fry for four minutes.
Add the sugar snap peas and garlic and stirfry for two to four additional minutes. Remove the frying pan from the heat.
Whisk all dressing ingredients together and pour over the stir-fried vegetables.
