Sweet and sticky in all the right ways, this pomegranate-glazed chicken is perfect for Rosh Hashanah. The crispy pargiyot soak up a glossy sauce of pomegranate syrup and silan, making it as symbolic as it is delicious.

Prepare the Chicken

  1. Combine cornstarch, salt, and pepper in a small bowl. Dredge chicken cubes in the mixture.

  2. Heat oil in a large, deep frying pan over high heat. Fry each piece for about two to three minute per side, until crispy and golden. Remove from pan and set aside.

Prepare the Sauce

  1. Combine sauce ingredients in a small pot over low heat. Cook for two minutes, until everything is combined.

Assemble and Garnish

  1. Add browned chicken to the sauce. Cover the pan, reduce heat, and simmer for 10 minutes, until cooked through.

  2. Before serving, garnish with sesame seeds and scallions, if desired.
