Non-dairy sorbet is a light and easy dessert option. Easy to make and easy to make ahead.
1 pint ripe strawberries, or 1 pound frozen strawberries, blended
2 eggs, separated
1/2 – 1 cup sugar
juice of 1/2 lemon
1 cup water (optional)
few drops strawberry extract (optional)
Mash strawberries.
Beat strawberries and egg whites at low speed until frothy, approximately 10 minutes.
Increase speed to medium and beat until soft peaks form.
Gradually add remaining ingredients. Beat only until combined.
Freeze until ready to serve.

Why is the water optional?
I would start without the water- if you see you want to loosen the consistency, then I’d add some. I think it will freeze creamier without the water!
Do I put also the yolks inside?
