Ingredients

Capons

  • 1 pkg. chicken capons

  • 1 pkg. pastrami

  • 2 Tablespoons Dijon mustard

  • Kosher salt

Spice Blend

  • 1 teaspoon paprika

  • 1/2 teaspoon coarse ground black pepper

  • 1 teaspoon coriander

  • 1 teaspoon cumin

  • 1 teaspoon turmeric

  • 1 teaspoon mustard powder

  • 1 teaspoon minced onion

Directions

Prepare the Capons

1.

Preheat oven to 350F.

Combine the spice blend in a small bowl.

3.

Open the capons, skin side down, and spread a thin layer of Dijon mustard.

4.

Sprinkle with kosher salt followed by the spice blend.

5.

Layer the pastrami vertically down the center of the capons.

6.

Roll the capons and place them, seam side down, in a pan.

7.

Thinly spread Dijon mustard on top, and sprinkle with kosher salt followed by the spice blend.

8.

Bake, covered, for one and a half hours. If you desire, broil uncovered for 2-3 minutes.
