When I served those cheese balls alongside a table full of delicacies, my guests ate them all within minutes. When I later revealed they were sugar-free, everyone thought I was joking.
Yields 20 cheese balls
2 cups oats (use gluten-free oats, if needed)
9 ounces (255 grams) 5% milk fat quark cheese
3 and 1/2 tablespoons butter, melted
1/4 cup xylitol
2 3.5-ounce (100-gram) bars sugar-free chocolate
Place the oats in a food processor and blend until finely ground. Combine oats, cheese, butter, and xylitol in a mixing bowl. Using a fork, mix thoroughly until a firm, cohesive mixture forms.
Form the mixture into small balls and arrange them on a baking sheet. Insert a toothpick into the center of each ball. Place the baking sheet in the freezer and freeze for several hours or overnight.
Once the balls are firm, melt the sugar-free chocolate. Carefully dip each ball into melted chocolate, allowing any excess to drip off.
Refrigerate until ready to serve. These cheese balls can be frozen.
