Sushi Side of Salmon

Salmon

Toppings

  • 1 and 1/2 cups cooked sushi rice

  • 2 cucumbers, julienned or shredded

  • 2 carrots, julienned or shredded

  • 2 avocados, cubed

Directions

Prepare the Salmon

1.

Preheat your oven to 400 degrees Fahrenheit.

Place the salmon on a lined cookie sheet.

3.

Mix the ingredients for the salmon in a small bowl. Spread evenly over the fish.

4.

Bake the salmon in the preheated oven for 45 minutes.

5.

After baking, let the salmon cool for a few minutes.

6.

With wet hands, evenly apply the cooked rice on top of the baked salmon.

7.

Return the salmon to the oven and bake for an additional 10 minutes.

Prepare the Toppings

1.

Once done, top with sesame seeds, sliced cucumbers, carrots, and avocado.

2.

Sprinkle the French onion crisps over the vegetables and drizzle a generous amount of spicy mayo over the salmon.

Tips:

The salmon can be prepared and baked 1 to 2 days in advance; just add the fresh vegetables before serving.
