Diets The fact that I can now prepare dishes like this and half the family will eat it (because they love guacamole or love roasted chickpeas, and they’re not really noticing the sweet potato on the bottom) is exciting to me. The fact that half the family is willing to taste it is also exciting. This is an amazing side dish, whether for a weekday meal or Shabbos (yes, it’s gorgeous on a Shabbos table too), because:
1) It’s exciting enough that if you have a simple protein, it wakes up the meal.
2) There’s so much wholesomeness here and the flavors are exciting.
Note: If you prefer to buy sweet potatoes pre-sliced in rounds, it’s fine, you just won’t have the peel and the toasts will be smaller. But, by all means, save the work! Feel free to halve the recipe if you don’t need this much. Then you can roast the sweet potatoes and chickpeas on the same baking sheet.
2 sweet potatoes, unpeeled, sliced (vertically or horizontally, your preference)
3 tablespoons Gefen Olive Oil
1 teaspoon salt
1 teaspoon Pereg Smoked Paprika
1 can Glicks Chickpeas, drained and dried
2 tablespoons Gefen Olive Oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Pereg Smoked Paprika
1/2 teaspoon chili powder
1/2 teaspoon cumin
2 ripe avocados
1/4 red onion, diced
1 medium lime
1/2 teaspoon salt
Preheat oven to 425 degrees Fahrenheit. Line two baking sheets with Gefen Parchment Paper.
Toss sweet potatoes with olive oil and seasoning and spread on one baking sheet. Toss chickpeas with olive oil and seasonings and spread on the other baking sheet.
Bake for 20-25 minutes, until sweet potatoes are soft in the middle and crispy at the edges and chickpeas are crispy.
Mash together all guacamole ingredients.
To serve, top sweet potatoes with guacamole and chickpeas.

Are you referring to the little balls on top? Those are chickpeas, not sweet potatoes. The sweet potato is the base at the bottom.
If you take the sweet potato and cut into slices it’ll become rounds. For this recipe, they took the sweet potato and cut it down vertically into thin slices.
