Tuna Niçoise Salad with Caper Gremolata

Ingredients

Niçoise Salad

  • 2 jars Tuscanini Tuna

  • 6 soft boiled eggs

  • 2 cups steamed green beans

  • 2 cups steamed asparagus

  • 1 bag white baby potatoes, boiled

  • 1/2 cup Tuscanini Olives

  • tomatoes on the vine

Caper Gremolata

  • 1/2 cup chopped parsley

  • 1/4 cup chopped pistachios

  • 2 tablespoons Tuscanini capers

  • zest of 1 lemon

Directions

Prepare the Salad

1.

Mix gremolata ingredients to combine.

2.

To serve family style, lay all ingredients out on a serving tray. Add Tuscanini Tuna on top of the steamed veggies and top with generous amount of caper gremolata.
